Mozzarella Sticks 🧀 Ingredients (serves 2): 120g firm mozzarella 30g breadcrumbs 1 egg Plain flour 1 tsp garlic powder Salt Black pepper Marinara sauce: 400g tinned tomatoes 1 tbsp tomato paste 1/2 onion 2 garlic cloves 1 tsp dried basil Salt Black pepper 1 tsp olive oil ——— Method: 1. Chop the mozzarella into sticks and place into the freezer for 30 minutes. 2. Finely dice the onion and finely chop the garlic. Fry the onion in olive oil for a few minutes, then add the dried basil, garlic, salt and black pepper. Cook for 30 seconds. 3. Add the tinned tomatoes and tomato paste. Mix well and then simmer for 15 minutes. 4. Get flour into one bowl, beaten egg in another and the breadcrumbs into a third bowl. Season the bread crumbs with salt, black pepper and garlic powder. 5. Coat the mozzarella in flour, then the egg and then the breadcrumbs. Place onto an oven tray and cook in the oven for 10 minutes at 200 degrees celcius. 6. Chicken Wrap Meal Prep 🌯 Ingredients (serves 5): 5 tortilla wraps 700g chicken breast 1 red bell pepper 1 red onion Handful of sweetcorn Handful of spinach 4 garlic cloves 2 tbsp tomato paste 2 tbsp cream cheese 1 tsp dried basil 1 tsp dried oregano Salt Black pepper 1 tsp olive oil ——— Method: 1. Dice the chicken, red onion and red bell pepper into small chunks. Finely slice the garlic. 2. Add some olive oil into a pan over medium heat, cook the red onion and red bell pepper for 5 minutes. Then add the chicken and cook for 5 minutes. 3. Add the garlic, oregano, basil, salt, black pepper and tomato paste. Cook for 30 seconds. 4. Add the spinach and sweetcorn, cook for 3 minutes. Then add the cream cheese and simmer for 3 minutes. 5. Divide the mixture into 5 equal portions, place onto your tortillas and wrap them up tightly. You can eat it how it is or toast the wrap in a pan, airfryer or oven if you prefer. Enjoy! 6. Wrap the other wraps in foil and store in the fridge or freezer for later. From birthday joy to burnout… this week reminded me how quickly things can change when you live with a chronic illness. It started with so much love, I celebrated my birthday surrounded by family, shared laughs, and received the most thoughtful gifts. I am so grateful to have such an amazing family 🥹 But as the week went on, my body began to crash. I’m overdue for my B12 injection, and because I don’t absorb vitamins and minerals like most people, my energy and strength have taken a big hit. Thankfully, it’s finally booked for next week. Where in your life have you put up with gradual deterioration until it’s too late? 🔥The use of the blow torch in this video might seem a bit shocking. But it is there to represent how harshly the heat can be turned up once we are trapped in a situation by our tendency to adjust rather than address problems. We might become broken down or weakened by the ever increasing toxicity of a situation. So, whether it’s a workplace, a relationship, a personal situation or a wider problem of town or country, the boiling frog metaphor speaks volumes about the potential consequences of not addressing small changes until it’s too late. Note: The boiling frog metaphor came from an experiment that was done over 150 years ago. The original theory has since been contested by modern biologists. But the value in the fable remains. 20 min / One-Tray Chicken & halloumi flatbreads 👌🏻 An actual lazy go-to meal - the bite sized halloumi makes me happy lol Ingredients: • 4 chicken thighs • 2 peppers, sliced • 1/2 onion, sliced • 1 block of halloumi, cubed • tsp garlic, paprika • 4 x flatbreads • tbsp Yogurt • handful rocket, cucumber, tomatoes, red onion (whatever veg you like) • mayo/siracha/sweet chilli • olive oil, salt & pepper • parsley/coriander 1. Add your peppers, onions & chicken to a large tray. Mix your seasonings and oil. Roast at 220c for 15 mins 2. Cube your halloumi and add to the tray for 5-10 minutes 3. Flatbread, yogurt, rocket, veggies, chicken & halloumi, sauce, herbs - ENJOY #fromscratch #familydinner #30minutemeals
