CLARIFIED MARGARITA 1.75 cups tequila 1/2 cup blue curaçao 1 cup grapefruit juice 1/2 cup Lime 1/2 cup agave or simple syup Pinch of salt 1/2 cup milk Throwback to a mustache and last year. Milk clarification preserves a cocktail for many months. It also changes the taste and texture. It softens the cocktail like shaking or stirring a cocktail would. It adds a texture similar to the result of a fat washed spirit or cocktail. Mine was a touch boozey, I adjusted the recipe for a more crowd pleasing cocktail. Always trust the description. Nutmeg is always a good idea with anything milk clarified. In fact, I'd argue most cocktails are better with nutmeg, but maybe I'm nuts. TOMMYS MARGARITA CLARIFIED 2 cup Tequila 3/4 cup Agave or Simple syrup 3/4 cup Lime 1/2 cup milk 🥛 Pinch of salt Tommy’s is my preferred margarita it’s fewer ingredients, very tasty. You could use a cinnamon syrup also to make it a “winter margarita”

SUPER JUICE 🍋 Peel lemons, wiegh them using grams. Add equal parts citric acid. Multiply the weight of lemon peels by 16.66 and that is how many grams of water you add. Blend well and strain well. Listen, this ain’t a Wisconsin fruit salad in a glass, I didn’t use rye whiskey, and a lemon peel slaps in an old fashioned so go troll your mother if you think otherwise. The original cocktail came about around 1806, consisting of a strong spirit of any kind, sugar, water, and bitters. It was probably genever or some type of brandy. Later in the early 1800s, cocktails evolved, ice was used, and bartenders started making the whiskey cocktail, which was whiskey, sugar, bitters, and water. Some years later, this cocktail started changing, but folks still wanted the OG whiskey cocktail, so it ended up becoming the old-fashioned way of making a whisky cocktail. That’s some serious loose history there, but I think it’s somewhat accurate, I’m not thinking too hard this morning.

EGGNOG - THE BEST 12 eggs 1.5 cups Sugar 3 tsp Fresh Nutmeg 36 oz Almond Milk 24 oz Heavy Cream 15 oz Cognac 15 oz Cream Sherry 6 drop Almond Extract 12 drops Vanilla Extract If you make this and plan to serve in a day or two. I would forst whisk or blend eggs with sugar, then add cream and milk. Whisk again, or blend, then add the remaining ingredients. I don't because I let mine sit for months, and it settles, so I don't find it necessary to whip. You can add booze to taste. I like this. It's not too much and not too little. You can definitely add more if you want something a touch more boozey. This recipe can be cut in half or even down to one quarter. You can definitely swap out the cognac for rum or whiske, etc, but I think cognac is pretty classic. This is the Christmas Miracle eggnog recipe. There’s pop ups all over the country in December at cocktail bars with a winter menu, and this eggnog is always included. Emily absolutely loves the nog.

SUPER JUICE WARS Watch the whole video to really know my opinion. I’m all for super juice, especially when batching, having friends over, and creating my own cocktails because it’s easy and saves me time without me getting burnt out on cutting and squeezing, I know, I’m a baby. Educated Barfly on YouTube did a comparison video that interested me because he said Kevins juice was bad and made a bad daiquiri. I thought, wow, really? I assumed he made it wrong, and I don't necessarily agree with his taste preferences on a daiquiri. But, what if he was right, so I wanted to revisit this and compare it to this new version he claimed to be superior. Im always looking to improve and change something if there's something better. So I thought, why not record this overly long instagram video to see my thoughts on it. Brian's should last months in the fridge, Kevins lasts two weeks in the fridge. KEVINS JUICY JUICE LIME PEELS: Peel and weigh them CITRIC: Multiply wieght of peels by .66 MALIC: Multiply wieght of peels by .33 WATER: Multiply wieght of peels by 16.66 BRIANS, JUICY JUICE 500g water 30g sugar 30g lime peel 24g citric acid 12g malic acid 1g sea salt NICKEL MORRIS created the first ever super juice, which then spawned these other juices over time. All props go to him for this. He probably doesn't get enough credit. I've actually never made his. I am a product of my environment and the people I watch, and I used to watch a lot of Kevins content.

SUPER JUICE Super juice is great, it makes my life easier when entertaining, saves me time, and I think it's more consistent than fresh juice. Yes, I know. How could I say this when I made and make all the citrus jokes. Hey, I can't keep cheat codes to myself. This is a lime juice substitute, use it the same way you would with regular lime juice. I find it lasts 2 weeks in the fridge. And you CAN freeze it, but make sure it's fully thawed when you use it otherwise it's no good. Google Super Juice Calculator and @kevin_kos website will pop up. Click it and go to the calculator. Makes things even easier for you. Peel a lime or limes, then weigh it. Then add acid, the same weight of the limes. Acid mixture is a 2 to 1 mix, meaning two parts citric, one part Malic. Wiegh the peels, then multiply that number by 0.66 and that's how much citric acid you need. Now for Malic acid you multiply the wieght of the Peels by 0.33. Now for water you multiply the weight of the peels by 16.66. Blend this all together and the. Squeeze the limes you peeled. Strain through a cheese cloth and boom, super duper juice. P.s. YOU DONT WANT TOO MUCH PITH. I get a little and it's fine but don't go nuts. You can use a grater if you'd like. But get all that green. People trip on pith, as if we don't drink negronis and bitters.

These are the videos I really enjoy doing. It’s funny because I never thought anyone would watch this type of stuff from me. I’ll always post cocktails too, but it’s so nice to mix things up for me and enjoy it. I have not skated in a month. I fell so hard a month back, thought a broke my collarbone, and definitely messed a few fingers up. I'm happy to be back on the board. I finally found a ledge that’s small and fun to fart around on. It’s all about fun these days.

Its an aged Gin from BarrHill, their TomCat, but finished in stout casks and orange curaçao casks. We blended two casks together creating an aged orange chcolate gin vibe. Its awesome and special.

It definitely scratches the itch, I really like it. P.s. Despite making cocktails for the internet, I’m actually not a cocktail snob because I read the room. If I’m in NYC at a craft cocktail bar, sure, I’d hope my drink is decent. If I’m at a restaurant in some random town, I’m not ordering a jungle bird… read the room. I also would never critique any bartender, I’d never send a drink back and never have, even if it’s trash, I just drink it and keep my mouth shut and keep it moving. Sometimes, I think the internet needs to chill out when they go out to bars. A lot of bars and restaurants are trained on a menu, so we can’t always expect them to know how to make a daiquiri or a mai tai unless it’s a craft cocktail spot with those types of drinks.
