Elote mexican street corn dip 🌽🫶🏻 i couldn’t imagine a more beautiful thing 🥹 Ingredients: 2-3 cups corn 2 tbsp mayonnaise 1/4 cup Greek yoghurt (60g) 30g parmesan, grated 2-3 tbsp juice 1/4 tsp paprika 1/2 tsp garlic powder 1 cucumber 1/2 cup coriander / parsley 1 cup red or spring onion 1 tbsp jalapeño 30g feta, crumbled Method: 1. Add corn to pan and cook for 5 minutes over high heat until lightly charred. 2. Mix the mayo, Greek yoghurt, lime juice, parmesan, paprika and garlic together in a bowl. 3. Add the corn to the bowl while it’s hot and mix well (the heat will melt the cheese). 4. Add cucumber, herbs, onion and jalaepno. Recipe👇🏻 240g dried pasta 500g chicken, diced 30g MasterFoods x My Muscle Chef Peri Peri Spice Blend 1 red onion, sliced 2-3 capsicums, sliced 1-2 tsp garlic 60g tomato paste 350ml chicken stock 130g light cream cheese Fresh parsley, to serve 1. Cook the pasta until el dente. Drain and set aside. 2. Add the chicken to a fry pan over medium-high heat, season with 1/3 of the peri peri spice blend and cook for 5 minutes. 3. Add the onion, capsicum and cook for a 2-3 minutes until softened. 4. Add the tomato paste, garlic and remaining peri peri seasoning, cook for 1-2 minutes. 5. Add the chicken stock, mix well and simmer for 5-10 mins until sauce reduces and thickens. 6. Add the cream cheese and mix until creamy. Sweet potato tuna patties 😍🍠 I’m not the biggest fan of tuna but it tastes so good like this!! Ingredients: 1 large sweet potato, peeled (500g) 2 x 185g can tuna in springwater (or 1 x 425g can) 1 egg 1/2 cup onion, diced 1/2 cup fresh parsley or coriander, chopped 1 tbsp Dijon mustard 1 cup breadcrumbs (120g) 1/2 tsp each garlic & onion powder 2-3 tbsp olive oil, for frying Method: 1. Cut the sweet potato into chunks then place in a microwave dish with water. Cover and microwave on high for 4-5 minutes until tender (steam/ boil on the stove works too). 2. Drain the sweet potato and place in a large bowl. Mash the sweet potato with a fork then set aside to cool slightly. 3. Drain the tuna and add to the bowl along with the remaining ingredients. Season with salt, pepper and chilli powder to taste. 4. Mix until well combined then shape the mixture into 12 patties (approx 1.5cm thick). 5. Heat the olive oil in a fry pan and cook the patties in batches until golden and heated through. Serve with salad, lemon juice, mayo or sauce of choice. Hot honey baked brie 🧀✨ this tastes and looks so fancy but is sooo easy to make! Ingredients: 1 camembert or brie wheel (180-200g) 1 tbs honey 1 sprig fresh rosemary or thyme Pinch of chili flakes & sea salt ¼ cup walnuts/pecans (30g) 2 tbs dried cranberries (20g) 1 tsp olive oil Method: 1. Preheat the oven to 160 degrees Celsius. 2. Score a cross pattern on the top of the cheese. 3. Place the cheese wheel in a baking dish, drizzle over 1/2 tbsp honey, chilli flakes and sea salt. Bake for in the oven for 12-15 minutes. 4. Mix the walnuts, cranberries, rosemary, olive oil and remaining honey together in a baking dish. Bake for 3 minutes or until walnuts are lightly toasted (careful they don’t burn!). 5. Spoon the caramelised walnut mixture over the baked brie and serve warm with crackers or crostini. This one pot creamy beef pasta makes the best weeknight dinner or meal prep! 🍝🥕 Ingredients: 1 tbsp olive oil 2 cloves garlic, minced 1 onion, diced 500g extra lean beef mince 1 zucchini, diced or grated 1 carrot, diced or grated 2 tsp Italian herbs 2 tbsp tomato paste 400g canned tomatoes or passata 1/4 tsp tsp chilli flakes 1 tsp salt 1/2 tsp black pepper 750ml chicken stock 300g pasta 125ml light thickened cream Method: 1. Add the olive oil to a fry pan over medium heat, sauté the onion and garlic. 2. Add the mince to the pan and cook for 5 minutes until there are no pink bits. 3. Add the zucchini, carrot, tomato paste, dried herbs, chilli flakes, salt and pepper. Cook for 1-2 minutes until veggies have softened. 4. Stir in the tomatoes, stock and pasta*. Cover and simmer for 15 minutes, stirring regularly. Add the cream and simmer for an additional few minutes. 5. Serve with parmesan or mozzarella and fresh parsley. Macros per serve (serves 5): 474 calories P 33.8g C 61.9g F 10.6g *Increase/reduce the stock if you want it to be more or less soupy.
