Testing out Meghan Markle’s one pan pasta recipe. I tweaked it a bit for our taste preferences. She adds Swiss chard and Kale and I swapped out with Spinach. She boiled everything in one pan and chose to simmer the garlic and tomatoes in olive oil before adding water. Recipe. In a large skillet or pan add 3 tbsp of olive oil, 16 ounces of grape tomatoes, 4 tbsps of minced garlic and salt to taste. Cook on low heat for 10 minutes while occasionally stirring around. Next pour in one cup of water and stir the sauce to collect and clumps sticking to the pan. Then add one package of pasta and pour in about 3 cups of water. Cover with a lid and cook for 7-8 minutes. Uncover and mix pasta around so it doesn’t stick together and finish cooking for another 3-4 minutes. You may need to add more water if the sauce is too thick. Martha Stewart’s One Pan Pasta Recipe with a little tweak to make it taste better. Instead of putting all the ingredients in one pan and boiling, I cooked everything first and then pasta and water to finish cooking. Start by cooking one pound of grape tomatoes in 3 tbsps of olive oil. Season with salt with your taste preference. Cook until tomatoes soften and then add 2 tablespoons minced garlic. Cook for 3-4 minutes and then add half a sliced onion. Cook for another 3-4 minutes, then add dried linguine pasta and pour in 3 cups of water. Cover with a lid and simmer for 6-7 minutes on low. Remove lid and mix pasta to separate the noodles. You may have to add another 3/4 cups of water if noodles are still not cooked enough. Add a handful of chopped basil and continue cooking uncovered for 2-3 minutes. Turn off heat and top with grated Parmesan cheese. #meganmarkle #meghanmarklepasta #onepanpasta
If you’re looking to add more protein to your meals try this ground beef sweet potato bowl. The recipe is really simple. Peel and cube 2 large sweet potatoes and place in a large bowl. Drizzle about 2 tablespoons of olive oil and add 1 teaspoon of salt. Mix and then place on a baking sheet. Bake at 375F for 45 minutes. In a medium skillet pan add 1 tablespoon of olive oil and one pound of ground beef. Season with garlic powder, paprika, salt and pepper. Cook in medium heat until beef gets slightly crispy. With a paper towel soak out any excess oil and fat. To serve add to a bowl a layer of sweet potatoes, then ground beef, cottage cheese, avocado, hot sauce and honey. Happy Saint Patrick’s Day! Here’s my easy go to recipe for Corned Beef and Cabbage. 1 package of brined Corned Beef. I prefer the flat cut because it’s great for leftover sandwiches. Rinse and pat dry with a paper towel. Lay a bed of onions in a Dutch oven or large pot, place the corn beef on top of the onions, squeeze a generous amount of mustard on top, sprinkle the seasoning packet that comes with the package, add some garlic powder, paprika and pepper. Pour in enough water to reach almost the top of the corn beef, but not submerging it. You want to keep mustard seasoning top above water. Then add some beef bullion. Some people also like to add Guinness. Cover with a lid and simmer on low for 3 hours. Then remove the corn beef and add cabbage, potatoes and carrots. Cover with a lid and simmer for another 20 minutes. #cornbeefandcabbage
