Therapy green ravioli with muhammara For the love of cooking and wearing nice clothes. Therapy for me is cooking long and slow, and buying a whole new outfit to feel epic. This whole outfit is from @asosman ad Recipe makes 4 bowls: Muhammara: - 4 red peppers - 4 garlic cloves - 1 cup walnuts - 1 cup breadcrumbs - 1 tbsp cumin seeds - 1/4 cup olive oil (total) - 60g pomegranate molasses - 2 Tbsp tomato paste - 1/4 cup tahini - Salt Spinach pasta: - 200g spinach, blanched and then squeezed of all juices - 3 eggs - Pinch salt - 1 Tbsp olive oil - 300g 00 flour Ricotta filling (you will have leftovers): - 200g ricotta - 200g feta - 1 orange rind and juice Method: Ravioli: 1. Blanch and squeeze spinach, add with eggs, olive oil and salt and blend until smooth 2. Add into a well of the flour and combine until a soft and pliable dough, kneading for 5 minutes. Fridge for 30 minutes (do your mumammara now) 3. Blend your ricotta filling ingredients together 4. Roll out pasta sheets (cutting dough into 4 first) then separate pasta sheets for filling 5. Fill all equally on one sheet, put a sheet on top, then cup each ravioli before cutting to remove air. Then cut 6. Cook in salted boiling water for 3 minutes Muhammara: 1. Roast peppers and garlic with some olive oil for 5-10 minutes on 180c until slightly cooked and the let cool and peel skins off 2. In a dry pan add walnuts and toast then add breadcrumbs at eil to brown, turn heat off 3.
