Season the back of the ribs first using a top-to-bottom motion. (You can use mustard as a binder if you want.) Then, season the sides and place the ribs in an aluminum pan to let the seasoning soak in. Lay the slab at an angle, pushing in the sides so they cook tight. Smoking Process: Place the ribs on the smoker. At 1 hour 30 minutes, rotate the ribs (don’t flip) and spritz with apple juice. At 1 hour, remove the ribs and lay out foil. Sprinkle brown sugar, add four squares of butter, and place the ribs front-side down on the butter and brown sugar. Add more brown sugar on the back (don’t press), drizzle Parkay evenly on the back, and spritz apple juice around the foil. Wrap tightly and return to the smoker for 45 minutes to 1 hour. Finishing Touch: Remove from foil, apply a light coat of BBQ sauce, and place on the high rack (off direct heat) for 10-20 minutes.
