Serves: 10-20 Prep time: 30 minutes Marinate time: 10 hours Cook time: 6 hours Ingredients: 1 pork shoulder, large cubes 2 racks side ribs, broken into 2 bones Marinade 2 tablespoons pork lard 3 cooking onions, chopped 1 bulb garlic, sliced Toasted Spice Mix 1 tablespoon coriander 1 tablespoon oregano 3 sticks of Mexican cinnamon 1/2 teaspoon cloves 1 tablespoon cumin 1 tablespoon peppercorns 1/3 cup apple cider vinegar 1.5 cups orange juice 1.5 cups achiote paste 7 bay leaves 3 banana leaves Method: 1. Caramelize onions and garlic in lard and add to a blender with toasted spices. Top with achiote, vinegar and orange juice. Blend until smooth. 2. Line a large baking vessel with banana leaves and toss in the pork. Massage in the marinade and leave overnight. 3. Wrap with parchment and foil, bake at 350F for 6 hours or until the meat is tender. 4. Break up the meat and remove the bones while gently mixing the sauce into smaller pieces. 5. Sauce Mornay Yield: 500 ml Ingredients: 1.5 tablespoons local butter 1.5 tablespoons all-purpose flour 2.5 cups local whole milk 1/8 teaspoons nutmeg 1/4 teaspoon salt 1/8 teaspoon black pepper 40 layer lasagna Bake time: 45 minutes Rest time: 13 hours Special tools: loaf pan Ingredients: 10 blanched pasta sheets, same size as a loaf pan 1 litre tomato sauce ½ lite mornay sauce 2 cups local mozzarella, shredded 1 chunk local parmesan, for grating Pesto, for garnish Method: For the Sauce Mornay: 1. In a small sauce pan, gently warm local whole milk. 2. In a separate pot, melt butter and add flour. Cook softly until a blonde colour starts to appear slowly add milk 1/2 cup at a time, while stirring. Add seasoning and let rest. For the Lasagna: 1. Layer the pasta, sauce, mozzarella and parmesan until the loaf pan is full. 2. Bake at 350F for 45 minutes. 3. Let cool then place in fridge overnight weighted downed. 4. Slice into 1-inch portions and sear on both sides. 5. Garnish a plate with tomato sauce, mornay sauce and pesto.
